This is a wonderfully simple dish that my grandma used to make: she called it caviar - probably because of all the seeds (from tomatoes and eggplants) that are visible in this spread.
Nina - that looks so good!! I happen to love Eggplant. Two questions - do you peel the eggplant before dicing it, and what is in the jar that is green?
The jar is Olive Oil - thank you! And as for peeling: I prefer my eggplant to be a bit spicy and I love color in my food - so I do not peel it and do not salt it beforehand. Dut if you want it to be more mild - peel the skin, cube and salt the eggplant and let it sit for 20-30 min to sweat a bit. Then rinse and boil. Good luck!
